Buah Naga termasuk buah yang banyak disukai orang karena bentuk buah Naga ini sendiri yang sangat menarik. Buah Naga sendiri salah satu buah yang tidak mudah rusak apabila cara penyimpanannya tepat. Penyimpanan yang tidak tepat dapat mempengaruhi kadar vitamin C pada buah. Tujuan penelitian ini adalah untuk mengukur pengaruh suhu dan lama penyimpanan pada kadar asam askorbat Buah Naga Putih dengan metode Spektrofotometri UV-Vis. Metode: Penelitian ini menggunakan metode eksperimental dengan pre and post-test with control group design. Objek penelitian yaitu buah Naga Putih kontrol (hari ke-6), disimpan pada suhu dingin (20C – 80C) dan suhu ruang (150C-300C). Hasil: Pengukuran kadar vitamin C pada Buah Naga Putih hari Kontrol sebesar 13,68 mg/100 gram. Buah Naga Putih yang disimpan pada suhu dingin (20C–80C) dari hari ke-12 sampai hari ke-14 berturut-turut adalah 12,99 mg/100 gram, 8,14 mg/100 gram dan 7,59 mg/100 gram. Sedangkan buah Naga Putih yang disimpan pada suhu ruang (150C-300C) dari hari ke-12 sampai hari ke-14 berturut-turut adalah 8,21 mg/100 gram, 5,15 mg/100 gram dan 5,08 mg/100 gram. Kesimpulan: Suhu dan lama penyimpanan berpengaruh terhadap penurunan kadar vitamin C buah Naga Putih (Hylocereus undatus).
