Description An account of the resource ABSTRAK Latar Belakang : Tablet kunyah diharapkan dapat memberi residu rasa enak dan mudah ditelan sehingga diperlukan pengisi yang manis. Pengisi yang digunakan yaitu manitol dan sorbitol. Kedua pengisi tersebut dapat menutupi rasa pahit dari zat aktif. Zat aktif yang digunakan yaitu daun stevia dan daun sambiloto yang mempunyai kandungan steviosida dan andrografolid yang berkhasiat untuk menurunkan kadar gula darah. Penelitian ini bertujuan untuk membuat tablet kunyah dengan variasi manitol-sorbitol sebagai pengisi. Metode : Penelitian ini menggunakan metode eksperimental. Daun stevia dan daun sambiloto dimaserasi menggunakan etanol 70%. Ekstrak yang telah didapatkan diformulasikan menjadi tablet kunyah dengan variasi manitol-sorbitol (90%:10%), (80%:20%), dan (70%:30%). Metode yang digunakan yaitu granulasi basah. Granul yang diperoleh diuji sifat fisiknya yaitu kecepatan alir, sudut diam dan kompresibilitas. Kemudian diuji sifat fisik tablet meliputi keseragaman bobot, keseragaman ukuran, kekeraasan, kerapuhan, waktu hancur dan kualitas rasa. Hasil : Berdasarkan hasil uji sifat fisik granul dari ketiga formula memenuhi persyaratan. Sedangkan uji sifat fisik tablet memenuhi persyaratan yang ditinjau dari keseragaman bobot, kerapuhan, dan waktu hancur. Namun, pada keseragaman ukuran ketiga formulasi tidak memenuhi syarat. Pada uji kekerasan dan kualitas hanya formula 1 yang tidak memenuhi syarat karena kekerasannya 3,65 kg dan memiliki rasa yang tidak enak. Kesimpulan : Ekstrak daun stevia dan daun sambiloto dapat diformulasikan menjadi tablet kunyah yang memenuhi syarat dan stabil secara fisik kecuali keseragaman ukuran yaitu pada formula 2 dan formula 3 dengan konsentrasi manitol:sorbitol (80%:20%) dan (70%:30%). DENGAN VARIASI PENGISI MANITOL DAN DEKSTROSA SERTA UJI KESTABILAN FISIKNYA Description An account of the resource Daun srikaya (Annona squamosa L.) merupakan salah satu tumbuhan berkhasiat obat yang sering digunakan masyarakat Indonesia. Daun srikaya dapat dimanfaatkan sebagai obat anti-inflamasi. Penelitian ini bertujuan untuk membuat tablet kunyah ekstrak daun srikaya dengan variasi pengisi manitol dan dekstrosa serta uji kestabilan fisiknya. Metode : Daun srikaya sebanyak 1750 gram dimaserasi dengan pelarut etanol 95%, kemudian didestilasi vakum hingga didapat ekstrak kental. Pembuatan tablet kunyah ekstrak daun srikaya dibuat dengan tiga formula dengan memvariasikan manitol dan dekstrosa sebagai mengisi.Formula I dengan variasi manitol 10% dan dekstrosa 90%, Formula II dengan variasi manitol 20% dan dekstrosa 80%, Formula III dengan variasi manitol 30% dan dekstrosa 70%. Metode yang digunakan dalam pembuatan tablet kunyah ekstrak daun srikaya adalah Metode granulasi basah. Granul yang diperoleh diuji sifat fisiknya meliputi kecepatan alir, sudut diam, dan kompresibilitas. Tablet yang diperoleh dilakukan uji mutu fisik yang meliput uji keseragaman bobot, uji keseragaman ukuran, uji kekerasan, uji kerapuhan, uji waktu hancur dan penilaian kualitas rasa. Hasil : Ekstrak kental daun srikaya yang diperoleh adalah 224,40 gram dengan rendemen sebesar 12,82%. Ditinjau dari uji mutu fisik granul dan uji mutu fisik tablet menunjukkan bahwa formula I (manitol 10%), formula II (manitol 20%) dan formula III (manitol 30%) tidak memenuhi syarat uji mutu keseragaman ukuran dan waktu hancur. Ditinjau dari penilaian kualitas rasa hanya formula I(manitol 10%) yang tidak memiliki rasa yang enak. Kesimpulan : Estrak daun srikaya (Annona squamosa L.) belum dapat diformulasikan menjadi sediaan tablet kunyah dengan variasi manitol-dektrosa yang memenuhi persyaratan ditinjau dari uji evaluasi waktu hancur dan keseragaman ukuran. Karakteristik kebiasaan makan remaja biasanya tidak sehat seperti tidak makan pagi, malas minum air putih, melakuan diet yang tidak sehat, mengomsumsi makanan cemilan yang rendah gizi, dan junk food. Rata-rata asupan zat besi pada remaja yaitu 9,7-13,1 mg. Penelitian ini bertujuan untuk mengetahui formulasi terbaik, mengetahui uji daya terima, serta mengetahui kandungan gizi pada flakes Tilor berdasarkan analisis proksimat Formulasi terbaik dari 3 (tiga) formula yang dibuat yaitu FIII dalam komposisi (50 gram tepung hati ayam dan 5 gram tepung kelor) dengan aroma yang sedikit harum, warna yang cukup menarik, tekstur yang cukup renyah, rasa yang cukup manis, dan aftertaste yang sedikit mengganggu. Kandungan zat gizi pada flakes tilor (30 g) berdasarkan analisis proksimat yaitu Energi 144,9 Kkal, protein 8,4 gram, lemak 6,6 gram, karbohidrat 12,89 gram dan zat besi 4,03 mg. Berdasarkan uji kruskal wallis dapat ditarik kesimpulan bahwa tidak ada perbedaan berarti diantara ketiga formula flakes Tilor dengan kategori aroma, warna, tekstur, rasa, after taste, dan keseluruhan (p-value> 0,05). Perlu dilakukan penelitian untuk memperbaiki formula dan cara pengolahannya agar aroma dan warna dapat lebih diterima, serta disarankan untuk mengonsumsi flakes tilor dengan susu cair. Hemoglobin adalah suatu metaloprotein yaitu protein yang mengandung zat besi di dalam sel darah merah yang berfungsi sebagai pengangkut oksigen dari paru-paru ke seluruh tubuh. Anemia defisiensi besi adalah anemia yang disebabkan karena kekurangan besi yang digunakan untuk sintesis hemoglobin (Hb). Salah satu upaya perbaikan gizi yang dapat dilakkan untuk mengatasi anemia yaitu mengkonsumsi makanan yang kaya akan zat besi. Penelitian ini bertujuan untuk mengetahui formulasi terbaik, mengetahui uji daya terima, serta mengetahui kandungan gizi pada Minuman Sereal tepung mocaf dan tepung ikan seluangberdasarkan analisis proksmat. Penelitian ini dilakukan bulan Januari – Februari 2023. Penelitian ini menggunakan penelitian eksperimentasl dengan acak lengkap (RAL) non faktorial Hasil penelitian menunjukkan bahwa minuman sereal terpilih yaitu minuman sereal FI (15 gram tepung mocaf dan 5 gram terpung ikan seluang) dengan kandungan energi 421.15 kkal/100 gram, protein 11.68%, lemak 11.31%, karbohidrat 68.16%, zat besi (Fe) 9.43mg. Berdasarkan hasil uji Kruskal Wallis dan uji Mann-Whitney menyatakan bahwa adanya perbedaan signifikan pada kategori Aroma, Rasa, Aftertaste, dan Keseluruhan (p-value< 0.05). Sedangkan Warna dan Tekstur tidak memiliki perbedaan signifikan (p-value> 0.05). Perlu dilakukan penelitian lanjutan mengenai formlulasi Minuman sereal dengan tambahan Tepung Mocaf dan Tepung Ikan Seluang untuk Remaja Putri Anemia.
