Metode: Ekstrak kental daun nangka diperoleh dengan cara maserasi menggunakan pelarut etanol 96%, kemudian didestilasi vakum hingga didapatkan ekstrak kental. Pembuatan tablet ekstrak daun nangka dibuat dengan tiga formula dan memvariasikan konsentrasi bahan pengikat PVP sebesar 2%, 3% dan 4%. Metode yang digunakan pada pembuatan tablet adalah granulasi basah. Sebelum dicetak granul harus memenuhi syarat evaluasi fisik yang meliputi kecepatan alir, sudut diam dan kompresibilitas. Kemudian dilakukan evaluasi fisik tablet yang terdiri dari keseragaman bobot, keseragaman ukuran, kekerasan, kerapuhan dan waktu hancur. Hasil: Berdasarkan hasil penelitian, rendemen ekstraksi yang diperoleh sebesar 14,93%. Dari evaluasi fisik granul ketiga formula telah memenuhi persyaratan ditinjau dari evaluasi fisik tablet yang meliputi keseragaman bobot, keseragaman ukuran, dan kekerasan ketiga formula telah memenuhi syarat. Sedangkan uji waktu hancur hanya formula I dan II dengan konsentrasi PVP 2% dan 3% yang telah memenuhi syarat. Salah satu strategi untuk mencegah masalah anemia adalah dengan memberikan camilan atau makanan selingan yang tinggi protein dan zat besi. Sosis adalah produk makanan yang diperoleh dari campuran daging dan tepung atau pati dengan penambahan bumbu, bahan tambahan makanan yang dimasukkan ke dalam selongsong sosis. Beberapa bahan dapat dijadikan alternatif pilihan lain untuk meningkatkan zat besi pada sosis seperti hati ayam dan tepung mocaf. Penelitian ini bertujuan untuk mengetahui formulasi terbaik, daya terima berdasarkan sifat organoleptik, dan kandungan zat besi pada sosis hati ayam dan tepung mocaf sebagai pangan olahan sumber zat besi. Penelitian ini bersifat eksperimental dengan Rancangan Acak Lengkap (RAL). Pengolahan data yang digunakan adalah system tabulasi dan Kruskall Wallis. Pemberian kuesioner digunakan untuk mengetahui penilaian panelis terkait formula yang terpilih dari empat formula yang diberikan kepada panelis tidak terlatih sebanyak 30 orang. Formula yang terpilih dilakukan analisis kadar proksimat dan kadar zat besi. Hasil dari penelitian menunjukkan bahwa formulasi sosis hati ayam dan tepung hati ayam yang terpilih adalah F3 dengan nilai kadar zat besi sebesar 2,83 mg per 100 g. Hasil uji Kruskall Wallis menunjukkan bahwa terdapat ada perbedaan nyata antara sosis dari segi rasa dan tekstur (p≤0,05) sedangkan dari segi warna dan aroma tidak ada perbedaan nyata antara sosis (p>0,05). Perlu dilakukan penelitian lanjutan mengenai pengaruh pemberian sosis terhadap penderita anemia. Kemudian diuji sifat fisik tablet meliputi keseragaman bobot, keseragaman ukuran, kekerasan, kerapuhan, waktu hancur dan kualitas rasa.
