Bolu lapis kojo merupakan kue tradisional yang memiiliki rasa manis dan tekstur lembut. Bolu lapis kojo terbuat dari bahan telur yang membuat rasanya gurih, gula pasir, santan, tepung terigu, SKM, mentega dan daun pandan sebagai pewarna hijau alami. Penelitian ini bertujuan untuk mengetahui formula terbaik pada Bolu Lapis Kojo Tepung Sukun. Mengetahui hubungan daya terima dari Bolu Lapis Kojo Tepung Sukun. Kandungan zat Bolu Lapis Kojo berdasarkan analisis proksimat. Penelitian ini dilakukan dari bulan Januari-Mei 2022. Penelitian ini mengunakan penelitian eksperimental dengan rancangan acak lengkap (RAL) non faktorial. Hasil penelitian menunjukkan bahwa Bolu Lapis Kojo Tepung Sukun terbaik yaitu Bolu Lapis Kojo Tepung Sukun dengan perlakuan F3 (penambahan 50% Tepung Sukun) dengan kandungan energi 299,42 Kkal (per 100 gram), protein 12,99%, lemak 12,70%, karbohidrat 33,29%. %. Perlu dilakukan penelitian lanjutan mengenai pengaruh pemberian Bolu Lapis Kojo Tepung Sukun terhadap penderita obesitas. Perlu meningkatkan kandungan serat pada Bolu Lapis Kojo Tepung Sukun dengan meningkatkan penambahan bahan makanan sumber serat seperti tepung sukun dan buah-buahan. Penelitian ini merupakan penelitian deskriptif, menggunakan 34 responden, yaitu 17 responden yang mendapatkan alat makan plato dan 17 responden yang mendapatkan alat makan kotak di ruang rawat inap. Dari penelitian ini diperoleh secara keseluruhan dari responden yang mendapatkan alat makan plato dan kotak di ruang rawat inap yang diteliti. Persepsi responden terhadap cara penyajian di instalasi gizi RSUD Kabupaten Ogan Ilir sebagian besar sudah baik, yaitu 82,4% menyatakan suka. Persepsi responden terhadap hygiene dan sanitasi sudah baik yaitu 91,2% responden menyatakan bersih. Persepsi responden terhadap variasi makanan sudah baik, yaitu 79,4% responden menyatakan bervariasi. Persepsi responden terhadap sikap penyaji makanan sudah baik, yaitu sekitar 94,1% responden menjawab iya.
