Salah satu contoh bahan pangan yang dapat digunakan sebagai bahan yang diantaranya susu skim dan tepung sukun. Penelitian ini bertujuan untuk mengetahui formulasi terbaik pada kue tepung sukun. Mengetahui karakteristik sifat sensorik dari kue tepung sukun. Kandungan zat gizi kue tepung sukun berdasarkan analisis proksimat. Hasil penelitian menunjukkan bahwa formula kue tepung sukun terbaik menurut penilaian dari uji organoleptik adalah kue tepung sukun F3 (30 gram tepung sukun). Hasil analisis proksimat dari formulasi kue tepung sukun terbaik yaitu berupa. 325,84 kkal (per 100 gram), Protein 12,96%, Lemak 0,58%, Karbohidrat 55,45%. Salah satu upaya perbaikan gizi yang dapat dilakukan untuk mengatasi masalah gizi kurang yaitu dengan memberikan makanan tinggi energi dan protein. Contoh bahan pangan yang dapat digunakan dalam mengatasi gizi kurang adalah tepung ikan lele dan tepung kacang merah. Penelitian ini bertujuan untuk mengetahui formulasi terbaik, mengetahui uji daya terima, serta mengetahui kandungan gizi pada wafer tepung ikan lele dan tepung kacang merah berdasarkan analisis proksimat. Penelitian ini dilakukan bulan Januari – Februari 2022. Penelitian ini menggunakan penelitian eksperimental dengan rancangan acak lengkap (RAL) non faktorial. Hasil penelitian menunjukkan bahwa wafer terpilih yaitu wafer FIII (60 gram tepung ikan lele dan 40 gram tepung kacang merah) dengan kandungan energi 489.02 Kkal (per 100 gram), protein 25.92%, lemak 26.86% dan karbohidrat 35.90%. Berdasarkan hasil uji Friedman Test menyatakan bahwa adanya hubungan antara daya terima Wafer Tepung Ikan Lele dan Tepung Kacang Merah dengan kategori warna, rasa, aroma dan tekstur (p-value< 0.05). Perlu dilakukan penelitian lanjutan mengenai pengaruh pemberian wafer terhadap perbaikan gizi bagi yang memiliki masalah gizi kurang. Hasil Penelitian : didapatkan hasil dari 68 responden ibu rumah tangga yang mempunyai karakteristik dalam pengelolaan sampah dibank sampah berdasarkan umur <37 tahun (58,8%) dan umur >37 tahun (41,2%). pendidikan SD (7,4%), SMP (25%), SMA (52,9%), dan Perguruan Tinggi (14,7%). pekerjaan didapatkan: bekerja (39,7%), dan tidak bekerja (60,3%) pengetahuan didapatkan baik (45,6%), dan tidak baik (54,4%), dan sikap baik (29,4%), dan tidak baik (70,4%). Kesimpulan : Sebagian besar ibu rumah tangga mempunyai karakteristik, pengetahuan, dan sikap yang kurang baik dalam pengelolaan sampah di bank sampah sedangkan sebagian kecil ibu rumah tangga mempunyai karakteristik, pengetahuan, dan sikap, yang baik dalam pengelolaan sampah di bank sampah.
