Gula pada karbohidrat yang terkandung dalam makanan tersebut merupakan substrat dan media pertumbuhan bakteri, yang pada akhirnya akan meningkatkan proses terjadinya penyakit kerusakan pada gigi karena turunnya pH saliva akibat demineralisasi. Penelitian ini bertujuan untuk mengetahui ada tidaknya pengaruh pH saliva sebelum dan sesudah mengonsumsi biskuit manis dan asin. Penelitian ini adalah penelitian eksperimental dengan analisis data bivariat menggunakan uji Anova. Sampel yang digunakan sebanyak 64 mahasiswi di asrama Keperawatan Gigi Poltekkes Palembang. Hasil penelitian ini adalah pH saliva sebelum dan sesudah mengonsumsi biskuit manis 0,26% dan biskuit asin 0,38%. Biskuit manis dan asin ternyata sama-sama dapat menurunkan pH saliva tetapi penurunan pH setelah konsumsi biskuit manis lebih besar dibandingkan biskuit asin dan bermakna secara statistik.
